Sausage Stroganoff
8 oz. uncooked wide egg noodles
1 pound bulk pork sausage
8 oz. sliced fresh mushrooms
1 medium onion chopped
2 garlic cloves, minced
¼ cup all-purpose flour
¼ tsp. salt
½ tsp. paprika
1½ cups beef broth
1 cup sour cream
Chopped fresh parsley
Cook noodles according to package directions. Set aside.
In a large skillet, cook sausage, mushrooms, onion and garlic over medium heat until sausage is no longer pink and vegetables are tender, 5-7 minutes. Stir in flour, salt and paprika until blended; gradually stir in broth. Bring to a boil, stirring constantly; cook and stir 1-2 minutes or until thickened. Turn off heat. Stir in sour cream. Serve with noodles and sprinkle with parsley.
Total time: 30 minutes. Makes: 4 servings.
Cheesy Beef Casserole
4 cups uncooked medium egg noodles
1 pound ground beef
¾ cup chopped onion
2 cans (8 oz. each) tomato sauce
½ tsp. garlic powder
½ tsp. salt
¼ tsp. pepper
1 package (8 oz.) cream cheese
1 cup 4% cottage cheese
½ cup grated Parmesan cheese
1/3 cup sliced green onions
¼ cup chopped green pepper
Additional Parmesan cheese, optional
Cook noodles according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink, breaking it into crumbles; drain. Add the tomato sauce, garlic powder, salt and pepper.
In a large bowl, combine the cream cheese, cottage cheese, Parmesan cheese, green onions and green pepper. Drain noodles; place half in a greased 13x9-inch baking dish. Top with half each of the meat and cheese mixtures. Repeat layers. Sprinkle with additional Parmesan cheese, if desired.
Cover and bake at 350° for 30-35 minutes or until heated through.
