Salted Nut Roll Bars
3 cups salted peanuts without skins, divided
2 Tbsp. plus 1½ tsp. butter
2 cups peanut butter chips
1 can (14 oz.) sweetened condensed milk
2 cups miniature marshmallows
Place half of the peanuts in an ungreased 11x7-inch dish; set aside. In a large saucepan, melt butter and peanut butter chips over low heat. Add the milk and marshmallows; cook and stir until melted.
Pour over peanuts. Sprinkle with remaining peanuts. Cover and refrigerate until chilled. Cut into squares.
Prep time: 15 minutes. Yield: 32 squares.
Cinnamon Cranberry Oat Bars
3 cups quick-cooking oats
1½ cups Rice Krispies
1 cup dried cranberries
½ cup ground flaxseed
1¼ tsp. ground cinnamon, divided
½ tsp. ground nutmeg
½ cup packed brown sugar
½ cup light corn syrup
¼ cup canola oil
¼ cup honey
1 tsp. vanilla extract
¼ tsp. salt
2 tsp. sugar
In a large bowl, combine oats, Rice Krispies, cranberries, flax, 1 teaspoon cinnamon and nutmeg.
In a large saucepan, combine brown sugar, corn syrup, oil and honey; cook and stir over medium heat until sugar is dissolved. Remove from the heat; stir in vanilla and salt.
Stir in oat mixture; toss to coat. Press firmly into a 9-inch square pan coated with cooking spray. Combine sugar and remaining cinnamon; sprinkle over bars. Cool completely. Cut into bars.
Prep time: 55 minutes. Cook time: 5 minutes. Yield: 16 servings.
